Developing this recipe was an exercise in determination. It took forever, but the end result was worth every failed loaf. The secret behind this treat’s surprising, irresistible texture is the small yellow “crunch balls” (millet!) dispersed throughout the crumb. We use rich, flavourful coconut milk to form a dense, lucious batter. Then we soak the finished loaf with a serious amount of lemon juice—resulting in a treat that manages to be creamy and tangy at the same time. Our banana bread is the bestseller, but many people tell us the lemon loaf is actually their favourite.
